Yes, I’m back from spending a weekend in the boonies. If you want to know how my camping trip went, I blogged about it on my other blog.
On this blog I will be writing about the food we ate whilst in the woods.
First, let me say that it has been a VERY LONG TIME since I went camping. As a matter of fact, the last time I went, it was with Di. We ate a lot better on that trip (but we slept in a jeep- life’s a trade off).
Because I wasn’t sure what to expect, or how to pack the stuff, I wanted to keep the meals really simple. And because I didn’t want to get mauled to death by a bear, I didn’t want anything smelly. That knocks out quite a few of my favorite dishes.
Friday night we ate sandwiches under a tree while it rained- a lot. Saturday morning we ate homemade buttermilk pancakes. I made the batter before we left town (Dev’s mom’s recipe) and put it in a rubbermaid pitcher that had a spout. I burnt the first one….

But the rest of them came out ok. Saturday for lunch we ate sandwiches (again). Sunday night I ended up racing against time to boil spaghetti and wrestle open a jar of Ragu sauce before the skies opened up. I barely got the sauce on the noodles, when it began pouring rain again. The trees were our only refuge from the rain. We must have looked pretty sad, because the lady in the campsite next to us brought us fresh, hot rolls. Of course, she had a mack daddy rolling Holiday Inn RV- bastards.
Sunday morning we ate left over rolls and went to Creede for an early lunch….
Next time I won’t be so scared of bears. Camping really does offer some great opportunities for outdoor cooking. I just need to learn more about prep-work and packing. I really did have fun on this trip, and I hope there are many more in the future.
