I have found the same thing - the cheese I make at home doesn&#039;t melt well at all.  I&#039;ve added heavy cream to the milk and that did make it creamier (&quot;no!&quot;), but it didn&#039;t melt all that much better.  Do you use citric acid while making your cheese?
