Sunday dinner! Finally. I have been away from the blog for a while. I guess the summer just started getting away from me a bit. So tonight I thought it was time to return to blogland and get back on the ball.
Grouper fillets:
Cover both sides of the fillets with blackening spices
saute for about 3 minutes per side in a cast iron skillet
Pesto Farfalle
Cook pasta as directed.
For the pesto:
Blend Fresh Basil, Garlic, Parmesan, Pine Nuts, Olive Oil and salt – the quantities of this vary depending on home much you want to make. I usually just eyeball it and taste it along the way and I get pretty much what I want each time.
I served this with some fresh steamed brocolli and called it a night. It wasn’t glamorous, but its dinner
I will get more creative in the next couple of weeks as school gets back underway and I am on more of a schedule.
