Saturday I spent most of the day cleaning house and doing laundry and other such odious chores. It has been raining here for a week and looks to rain into all of next week. While this is gloomy, it does make the plants grow like crazy and in this case…BASIL. So…what better way to make use of basil than to whip up a batch of pesto, mix with bow-tie pasta and top with fresh feta and tomatoes and mixed with sauteed shrimp.
I grabbed two large handfuls of sweet basil
Mix in blender with:
1/4 cup of pine nuts
2 cloves of garlic
1/3 cup Parmesan cheese
drizzle olive oil in the blender while mixing until you get the texture you like.
sprinkle in salt and pepper to taste
(ingredients are approximate – hard to go wrong really)
The shrimp I cooked in a small amount of olive oil, garlic and salt and pepper.
Then simply ad to cooked bow-tie pasta and top with tomatoes and feta and enjoy. It was the perfect meal to enjoy before going to the theater for the evening. Yum – there is not much better than fresh ingredients.
